selfmade canneloni lasagna for 5 people: ingredients: for the filling - 350 gr spinach - 250 gr ricotta cheese - 5 slices whole-wheat toast - salt, pepper, nutmeg - 3 eggs
for the canneloni - 15 canneloni - olive oil for the baking dish - 500 ml tomato sauce - parmesan cheese
Step 1/6 Rinse spinach and spin dry. Cook briefly in a pot of boiling salted water just until wilted, then rinse with cold water, drain and squeeze firmly to remove excess liquid.
Step 2/6 Finely chop the spinach with a large knife.
Step 3/6 Toast the bread and finely chop.
Step 4/6 Drain the ricotta. Grate the nutmeg. Mix together spinach, breadcrumbs, ricotta and eggs in a bowl. Generously season with salt, pepper and nutmeg. Use a handblender to get it finer.
Step 5/6 Place the spinach mixture in a piping bag and cut off the tip.
Step 6/6 Pipe the filling into the pasta tubes. Place in a buttered/olive oil baking dish (22 x 15 cm) (approximately 9 x 6 inches) and spread tomato sauce to top. Bake on middle rack of preheated oven at 180°C (Convection not recommended, gas mark 2-3)(approximately 180 degrees) until heated through and bubbling, about 35 minutes; after 20 minutes, finely grate the Parmesan and sprinkle over the cannelloni. Let cool 5 minutes before serving.

One-Pot Broccoli Pasta
Ingredients 150g penne 150g broccoli (cut small) 70g sundried tomatoes 2 cloves garlic, crushed Juice of 1/2 lemon 2 tablespoons pesto 100g feta (plus more to serve) Handful of fresh basil leaves 1. Boil pasta in salted water for 6 minutes 2. Add broccoli to the pot and cook for 3 additional minutes 3. Drain pasta and broccoli then add it back to the same pot, turn heat down to low 4. Stir in the sun-dried tomatoes and garlic and cook for an additional 2 minutes 5. Add lemon juice and pesto 6. Add the feta to the pot, stir and remove from heat 7. Stir in the basil and top with more feta 8. Serve immediately 9. Enjoy!
