I was thinking about food satiety after theresalighton's smoothie posts, and was reminded of a conversation with a friend a while ago (he's dieting and fitnessing for weight loss). He showed me this video about a thing called "Protein Fluff" (picture on left). I was concerned that anything called 'fluff' could not possibly be classified as food (eg. marshmallow fluff).
Turns out if you mix protein powder (casein), with xanthan gum and some liquid, and whip the crap out of it for 10 minutes, it turns into a high volume fluffy mass that you can use to trick your brain/stomach into thinking it's eating a lot without actually eating a lot (liquids have a lower satiety).
The video I saw used root beer, which didn't do anything to convince me this was 'food' (I love root beer, but really). So I started googling and found people using frozen berries/fruit to add flavour/sweetness without adding too many extra calories. And the frozen fruit made it feel like a light sorbet/ice-cream.
This idea intrigued me and I started pondering ways of modifying the recipe to make it more interesting/tasty, which probably made the friend gesticulate wildly at his screen (instant messaging chat as he was in another country) and yelling out "STAHP! What are you doing? Adding delicious calories defeats the purpose of protein fluff!"
But it looks as though some variations of protein fluff look kind of similar to this thing from the Thermomix recipe book called Fruity Dream (picture on right) which is pretty much egg white, sugar and frozen fruit whipped until the whites fluff up. Even the protein fluff recipe linked to the image above includes egg whites and you can probably stabilise the fruity dream with xanthan gum.
While I'm not likely to require the protein fluff version of fluff in the foreseeable future, I'm curious about whether I can make a fluffier, more stable fruity dream with the xanthan gum. And creamier with the addition of milk powder, and how well it will freeze as a cheats ice-creamy thing.
If there are any fitness types with Thermomixes, there's a variation for you. And even if you don't have a Thermomix, a handheld or stand mixer should let you try this thing out with or without the protein powder for snacking purposes, though I don't know if you get the same level of satiety without the protein powder. Not a fitness/diet person, just a mad faux food scientist.
