Enjoy the flavors of the Mediterranean with this hearty tofu veggie sandwich. Marinated tofu brings a protein punch, while fresh veggies, hummus, and feta cheese provide layers of deliciousness. Perfect for a quick lunch or dinner!
Ingredients: 1 block extra firm tofu, sliced into 1/2-inch thick pieces. 1/4 cup balsamic vinegar. 2 tablespoons olive oil. 1 teaspoon dried oregano. Salt and pepper to taste. 1 cup mixed Mediterranean veggies sliced cucumbers, tomatoes, red onions, bell peppers. 4 whole wheat sandwich rolls. 1/4 cup hummus. 1/4 cup crumbled feta cheese. Handful of fresh spinach leaves.
Instructions: Combine olive oil, oregano, salt, pepper, and balsamic vinegar in a shallow dish. Turn to coat after adding the tofu slices to the marinade. Give it a minimum of half an hour to marinade. Set the grill pan or grill to medium-high heat. Tofu slices should be grilled for 34 minutes on each side, or until grill marks form. Sandwich rolls should be lightly golden-toasted. On the lower half of each roll, spread hummus. Add spinach leaves, crumbled feta cheese, mixed Mediterranean vegetables, and slices of grilled tofu on top. Sandwiches should be sealed with the top half of the rolls. Serve right away or cover with parchment paper to save for later.
