🎃 Sometimes it’s not easy to stay inspired! For the last couple of days I’ve been stumped for ideas (#fullmoon ? 🤔) So I thought I’d share with you another picture of these delicious pumpkin burgers I’ve been loving so much lately! If you want a fall-themed meal, these Amazing Vegan Pumpkin Burgers are a great choice. When pumpkin, quinoa, and black beans are mixed together, they make a hearty burger that is both healthy and tasty. For a delicious plant-based burger, put your favorite vegetables and vegan mayo on top of it.
Ingredients: 2 cups canned pumpkin puree. 1 cup cooked quinoa. 1 cup black beans, mashed. 1/2 cup breadcrumbs gluten-free if preferred. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 1 tablespoon olive oil for cooking. 4 whole wheat burger buns. Lettuce leaves, tomato slices, and vegan mayo for toppings.
Instructions: In a large mixing bowl, combine the canned pumpkin puree, cooked quinoa, mashed black beans, breadcrumbs, chopped onion, minced garlic, ground cumin, smoked paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined. Form the mixture into 4 burger patties, shaping them with your hands. Heat the olive oil in a skillet or on a grill over medium-high heat. Once hot, add the pumpkin burger patties and cook for about 4-5 minutes on each side, or until they are browned and heated through. Toast the whole wheat burger buns lightly in the skillet or on the grill. Assemble the burgers by placing a pumpkin patty on the bottom half of each bun. Top with lettuce leaves, tomato slices, and a dollop of vegan mayo. Place the top half of the bun on the toppings to complete the burgers. Serve the Amazing Vegan Pumpkin Burgers hot and enjoy!
