Made with fresh kadu pumpkin, aromatic spices, and lemon juice, Muraba-e-Kadu Pumpkin Jam is a delicious preserve from Afghanistan. This jam, which has a hint of spice and sweetness, looks great on your breakfast table or makes a thoughtful gift straight from your kitchen.
Ingredients: 1 kg fresh kadu pumpkin, peeled and diced. 750g granulated sugar. Juice of 2 lemons. 1/2 tsp ground cardamom. 1/4 tsp ground cinnamon. 1/4 tsp ground cloves. 1/4 tsp ground nutmeg. 1/4 tsp salt. 1/4 cup water.
Instructions: In a large mixing bowl, combine the diced kadu pumpkin, sugar, lemon juice, and salt. Mix well and let it sit for 2 hours to allow the pumpkin to release its juices. After 2 hours, transfer the mixture to a large, heavy-bottomed pot and add the water. Place the pot over medium heat and stir until the sugar has completely dissolved. Once the sugar has dissolved, add the ground cardamom, cinnamon, cloves, and nutmeg to the pot. Stir to combine. Reduce the heat to low and simmer the mixture, stirring occasionally, for about 1 hour or until the pumpkin becomes soft and translucent, and the jam thickens to your desired consistency. While the jam is still hot, ladle it into sterilized jars and seal them immediately. Allow the jars to cool to room temperature before storing them in a cool, dark place.
