Rachel Ray's Inside-Out Pizzadilla

Ingredients:

1 Tablespoon EVOO (or oil of your choice)

2 garlic cloves, minced

2 pinces red pepper flakes

1 15-ounce can diced fire-roasted tomatoes, drained

1/4 teaspoon (couple pinches) dried oregano

Salt and Pepper

Tortillas

1 pound ball smoked mozzerella cheese, thinly sliced

1 cup fresh basil (20 leaves, torn)

Instructions:

In a small pot, heat EVOO.

Add garlic and red pepper flakes, cook for about a minute.

Add tomatoes. Season with salt, pepper, and oregano.

Simmer tomatoes for 2 min and remove from heat.

Build quesadilla on skillet. Cook for 2 minutes on each side.

Notes:

07/10/2024 - I paired it with some proscuitto that had been sitting in my fridge FOREVER but this would also be great with a caesar salad.

Green Salad with Strawberry

Ingredients:

2 teaspoons strawberry jam

1 tablespoon balsamic vinegar

3 tablespoons EVOO (little less)

Salt + Pepper

1 pint fresh strawberries, sliced

4-5 cups romaine or chopped mixed greens (spring mix, spinach, etc)

Instructions:

In a medium bowl, place jam. Mix together with vinegar and EVOO.

Season dressing with salt and pepper to taste.

Add strawberries and greens, toss to coat evenly.

Notes:

06/19/2024 - Made this, paired with a ham n cheese sandwich, or a croque monsieur. Added a salad topper from Walmart - flavors go well together. Would be a great full course with chicken breast and some cheese (feta or goat) for a nice spring/summer. Needs to be whisked together, they emulsify well.

Can pair the dressing with fruits, or a grilled cheese too.

Got myself a proper roasting pan and a proper meatloaf pan. I hate when I roast or bake anything with grease it collects in the meat and makes it soggy.
