A colorful and healthy quinoa succotash with a tasty tahini dressing made with spices. This dish is a great mix of textures and tastes because it is full of colorful vegetables.
Ingredients: 1 cup quinoa. 2 cups vegetable broth. 1 cup cherry tomatoes, halved. 1 cup corn kernels. 1 cup bell peppers, diced. 1 cup zucchini, diced. 1/2 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh parsley, chopped. Salt and pepper to taste.
Instructions: Rinse quinoa under cold water. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed. In a large skillet, saut red onion until softened. Add bell peppers, zucchini, and corn to the skillet. Cook until vegetables are tender. Stir in cherry tomatoes and cooked quinoa. Season with salt and pepper. In a small bowl, whisk together the spiced tahini dressing see below. Pour the dressing over the quinoa succotash mixture and toss to combine. Remove from heat and stir in fresh cilantro and parsley. Serve warm, garnished with additional herbs if desired.
