Interesting – when you walk in, the first thing you see are some wall mounted iPads. Use one of those to place your order and pay, then take your receipt to the host who will seat you. It would be nice if there were no human interaction, but a human still shows you to your seat and brings your food. The screen has an estimated wait time. You also provide a tip before you’ve even been served.
The menu includes a few types of ramen, sides (rice bowls, ramen burger, fried rice, pork belly bun), and drinks. The ramen is highly customizable. You can choose your protein, add-ons, level of spice, level of garlic, and amount of green onions. There’s a vegan ramen option and gluten free option too. You can also order ramen to go. Sodas come with free refills.
Condiments and utensils are kept at each table and include nori strips, raw garlic with garlic presses, and a sesame seed grinder. Choose from counter seating, small tables or communal/large table seating. You can watch the food being prepared in the open kitchen.
* Bold ramen ($15): This seems to be their signature ramen. It features homemade tonkotsu broth, seasoned soft-boiled egg, green onion and choice of protein (chashu – braised pork belly, chicken or tofu). This arrived pretty quickly in a tall, deep bowl. I chose “Are You Insane?” spice level, garlic lover with extra green onions. The spice level wasn’t crazy hot but the chili flavor did overwhelm the pork flavor. I didn’t notice much garlic, so I added more. The noodles were firm, straight, and slightly chewy. I could tell that the broth was rich but the complexity was lost due to the spice level. There were a generous amount of noodles and chashu (4 slices!). The chashu was tender with fatty bits and a hint of soy. The egg had a nice soft yolk. The basics were definitely good but I should have chosen another spice level.
Tatsu is in a strip mall that isn’t too busy. You should be able to find parking.
