These straightforward baked chicken tenders have a fantastically tasty coating made of bread crumbs and dry ranch seasoning mix.
This snack mix makes a party-sized batch that you can store in the fridge for up to a week. This gluten-free combo is savory, buttery, salty, and a little tart from the cranberries.
Crunch Baked Ranch Chicken
Ingredients: - 3/4 c mayo - 2 tsp ranch seasoning - 1 c panko bread crumbs - 1 lb chicken
Preheat oven to 400F.
In a medium bowl, combine 3/4 c mayo and 2 tsp ranch seasoning. Mix. Place bread crumbs in a shallow bowl or plate.
Dip each piece of chicken in the mayo mixture, turning until well-coated. Lay the chicken in the bread crumbs and turn until evenly coated.
Arrange chicken in glass baking dish.
Bake 25-30 minutes.
P.S. The extra breadcrumb/mayo mixture can just be dumped in the pan and baked along with the chicken. It’s great for topping butter-pasta, which can be served as a side.
Baked Ranch Chicken
Ingredients: - 1 lb chicken (breasts or boneless thighs) - 4 oz cream cheese - 1 Tbs ranch mix - 1 green onion, chopped - 1/2 c shredded cheddar - 4 slices bacon
Mix 4 oz cream cheese, 1/2 Tbs ranch mix, and 1 chopped green onion.
Place 1 lb chicken in bottom of an 8x8 glass baking dish. Sprinkle with 1/2 Tbs ranch mix. Spread cream cheese mixture on top of chicken. Top with 1/2 c shredded cheddar. Bake at 375F for 40-45 min.
Meanwhile, cut 4 slices of bacon into smaller strips or bits. Cook in a pan, then scoop out to drain. When chicken is done, sprinkle bacon bits on top and bake another 5 minutes.
