What is Ras Malai? Google is giving me mixed signals. Its it a dessert? Cause it's showing me two desserts ones cake like the other is cheese dumplings in a cream sauce, which I wouldn't call a dessert but it's a dessert. Both look good btw no offense to your culture

Yeah, it’s a dessert. Basically, citric acid is added to milk to curdle it. The solid thingy left after that is called chenna and is mashed into smooth balls. This is soaked in malai which is like clotted cream (that’s what google tells me, but yes, it is some form of cream. It’s like thick… milk). Along with malai you have lots of other stuff depending on which region you’re from. Sugar is also added at some point but I am not sure when lol.
The version I eat has sliced almonds, a pinch of saffron (because it’s fucking expensive), hence that yellowish colour. I personally don’t like cardamom in it, but lots of places put it into the dish. The balls are cooked and soaked in milk and malai, and the final thing is damn good. Like, oof. It’s definitely one of my favourite desserts.
