Raspberry Lemon Cookies-Bright & Zesty Dessert
These zesty and fruity Raspberry Lemon Cookies will tantalize your taste buds. The combination of tangy lemon and juicy raspberries is a delicious treat.
Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 2 teaspoons lemon zest. 2 tablespoons lemon juice. 1 egg. 2 cups all-purpose flour. teaspoon baking powder. teaspoon salt. cup fresh raspberries, chopped.
Instructions: Preheat the oven to 350F 175C. In a large bowl, cream together the butter and sugar until light and fluffy. Add the lemon zest, lemon juice, and egg. Mix well. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the chopped raspberries. Drop spoonfuls of dough onto a baking sheet lined with parchment paper. Flatten each cookie slightly with the back of a spoon. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
