Spookioli Ravioli! I shared this fun pasta project on my stories last year and I loved them so much, I figured I should make another round of tasty characters and share my knowledge! . All you need to know about this pasta dough: 3 ingredients: 1 cup all-purpose flour, 1 large egg, 2 Tbl water +\-. Depending on the protein content in the flour (I use King Arthur) and your egg size, you’ll need to add a little bit of water to bring the dough into a workable (dry, not sticky) ball. I add my gel food coloring to the egg first, whisk it and then add the flour. Adjust with water, knead for 5 min, wrap in plastic wrap, and let rest at room temp for 30 minutes. Do this for each color you want to use. I typically make 1 dough per person. I use an electric pasta roller (I have the kitchen aid attachment) to get those paper thin sheets. Rolling pasta is labor intensive so this kitchen gadget is SO nice to have. And then I use cookie cutters to cut my custom shapes, add filling of your choice, and pinch closed with a little water and fork.
