Ingredients: 8 oz 225g dark chocolate, finely chopped. 1/2 cup 120ml heavy cream. 1/4 cup 60ml Pinot Noir red wine. 2 tbsp 30g unsalted butter. 1/4 cup 30g cocoa powder, for dusting. 1/4 cup 30g powdered sugar, for dusting.
Instructions: In a saucepan, heat the heavy cream over low heat until it begins to simmer. Remove from heat immediately. Add the finely chopped dark chocolate and butter to the hot cream. Let it sit for 2-3 minutes to melt. Stir the mixture until smooth and well combined. If needed, gently heat the mixture over low heat while stirring, but do not boil. Pour in the Pinot Noir red wine and stir until fully incorporated into the chocolate mixture. Transfer the mixture to a shallow dish and refrigerate for 2-3 hours or until it becomes firm enough to scoop. Using a spoon or a melon baller, scoop out small portions of the mixture and roll them into bite-sized truffle balls. Roll each truffle in cocoa powder or powdered sugar to coat evenly. Place the coated truffles on a baking sheet lined with parchment paper and refrigerate for an additional 30 minutes to set.
