Vegetable Stir Fry with Rice, Corn, Mushrooms and Carrots Recipe
This honey lemon chicken is quick and easy to make, making it perfect for nights when you're busy. Honey and lemon are both sweet and sour, which goes well with the tender chicken. For a full meal, serve it with rice or vegetables.
Ingredients: 4 chicken breasts. 1/4 cup honey. 2 tablespoons lemon juice. 2 cloves garlic, minced. 1 tablespoon soy sauce. 1 teaspoon grated ginger. Salt and pepper to taste. 2 tablespoons olive oil. 1 tablespoon chopped fresh parsley optional, for garnish.
Instructions: Add honey, lemon juice, garlic powder, soy sauce, ginger powder, salt, and pepper to a small bowl. Mix the ingredients together. Pour the marinade over the chicken breasts that are in a shallow dish. Put it in the fridge for at least 30 minutes and up to two hours with the lid on. Put olive oil in a big skillet and heat it over medium-high heat. Get the chicken out of the marinade but don't throw away the marinade and put it in the skillet. The chicken is done when it's no longer pink in the middle and has been cooked for 6 to 8 minutes on each side. Add the chicken to the skillet with the marinade that you saved, and let it simmer for two to three minutes, or until it gets a little thicker.
