Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp ground cinnamon. 1/4 tsp ground ginger. 1/4 tsp ground nutmeg. 2 cups grated carrots. 1/2 cup crushed pineapple, drained. 1/4 cup vegetable oil. 1/4 cup beer your choice of type. 1/4 cup plain yogurt. 1 egg. 1 tsp vanilla extract.
Instructions: Preheat your oven to 350F 175C. In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. In another bowl, whisk together the grated carrots, crushed pineapple, vegetable oil, beer, yogurt, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Line a muffin tin with paper liners and fill each muffin cup about 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. While the muffins are baking, prepare the glaze: In a small saucepan, combine 1/4 cup of beer and 1/4 cup of granulated sugar. Bring to a boil, then reduce the heat and simmer for 5-7 minutes until the glaze thickens slightly. Once the muffins are done baking, remove them from the oven and immediately brush the tops with the beer glaze. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Serve and enjoy your tender carrot muffins with pineapple ginger and beer glaze!
