Root Vegetable and Lentil Soup is served at Lord Byron's Kitchen. It is hearty and good for you. This soup is full of healthy ingredients and is a comforting treat for any event.
Ingredients: 1 cup lentils, rinsed. 1 cup carrots, diced. 1 cup parsnips, diced. 1 cup turnips, diced. 1 cup potatoes, diced. 1 onion, finely chopped. 3 cloves garlic, minced. 6 cups vegetable broth. 2 bay leaves. 1 teaspoon dried thyme. 1 teaspoon smoked paprika. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a large pot, heat olive oil over medium heat. Add onions and garlic; saut until softened. Add carrots, parsnips, turnips, and potatoes; cook for 5 minutes. Stir in lentils, vegetable broth, bay leaves, thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes or until vegetables and lentils are tender. Discard bay leaves before serving.
