I’ve been feeling super hermity (Ah! To be a Cancerian hiding in her shell half the time!), so I did something rather unusual for me: I baked. These are #paleo #glutenfree #lowsugar lemon, raspberry, and blueberry muffins sprinkled with a tiny dusting of annisette sugar on top. Because I opted to only add a tiny amount of honey (rather than the amount called for), they are almost like scone muffins - which I love. Not too sweet, but with a bright lemon flavor (from both juice and zest). Sometimes (shit, let’s be honest here - all the time!), I MISS carbs like muffins and breads. I used Bobs Red Mill Paleo Flour and followed the muffin recipe on the back.
