In Timo’s Level 2 Pop’n Sweet Cafe story, he makes Rosolli with beets and beet accessories and somehow everyone in Kaleido is still confused about beets because apparently beets are a rarity there (and meatballs apparently).

A lot of recipes I found add apples to this salad, but apparently that’s not as traditional so I wanted to go with something that was more classic and included gherkins and herrings.  This one fits the bill and also offers some degree of customization in case you want a sweeter salad or dislike onions.

One of the things about this Finnish dish is that Timo remarks that it is traditionally served at Christmas.  This detail is a little strange because in Kaleido they are shown to have a winter festive holiday that is incredibly similar to Christmas in everything but name with some backstory about a star (I don’t recall the details of the holiday spin-off!), and yet in this story he references Christmas outright.  Does this mean that Christmas does exist in this world and Kaleido just celebrates its own version of it?  

Who knows?

Stop thinking about it and eat your damn winter salad at the appropriate holiday gathering.
