The perfect Sachertorte in Vienna
Across from the beautifulĀ StaatsoperĀ (Vienna State Opera), Hotel Sacher is as plush as youād hope: red velvet, white marble, gold relief. Tourists queue in the cold to get in (book to avoid this fate). The handsome torte arrives complete with seal. The thickest-yet layer of chocolate fondant holds everything nicely in place. Orderly. An excellent balance of fruity jam and rich sponge that also manages to be light.
I browse newspapers on the oldĀ ZeitungshalterĀ (traditional wooden paper rack), trying not to be influenced by my surroundings. We chat about the archduke Otto von Habsburg wandering the hotel naked at the turn of the 20th century. Lots of history; lavish surroundings; technically, the best torte weāve tried (one of 1,000 produced daily) ā Oh my. It delivers and then some. The apricot jam is fairly oozing, the chocolate icing almost caramel-like with a velvety sheen (made with untraditional-but-delicious butter and cream). AĀ delicious bargain!

While watching The Peak of Confection event story I noticed that Eishin Flash's new outfit had a little chocolate seal as part of her head wear and it reminded me of the decorative chocolate seal on the 'Official' Sacher Torte to show it is the real deal.
Fun fact: the recipie for the Sachertorte, a type of chocolate cake with an apricot jam filling, was created by Franz Sacher while he worked at a pastry shop called Demel in Vienna. When his son Eduard started to serve the cake at his own newly founded Hotel Sacher, a legal battle ensued over the details of the cake and its trademark.
While a resolution was reached that has meant both still serve the cake's secret recipie and can call it a Sachertorte, only Hotel Sacher's bears this seal of authenticity.

in a 2024 taste test by austrian newspaper der standard comparing sachertorte and variants thereof, the original sacher torte from hotel sacher was deemed "too dry" and disappointing. the winner of the blind taste test was a store-brand frozen sachertorte from the supermarket chain spar, which has the advantage of costing one-tenth the price of das original.
