A tasty salad with ribbons of zucchini, hearts of palm that have been caramelized, and a tangy lemon pesto vinaigrette.
Ingredients: 2 medium zucchinis, spiralized. 1 can hearts of palm, drained and sliced. 1 tablespoon olive oil. Salt and pepper to taste. 2 cups mixed greens. 1/4 cup cherry tomatoes, halved. 1/4 cup sliced almonds, toasted.
Instructions: Set a pan on medium heat and add the olive oil. It will take about 5 minutes of cooking after adding the sliced hearts of palm until they turn caramelized. Add salt and pepper, take it off the heat, and set it aside. Put shredded zucchini, mixed greens, cherry tomatoes, and toasted almonds in a large bowl and toss them together. Add the hearts of palm that have been caramelized to the salad. Use the recipe below for Lemon Pesto Vinaigrette to dress the salad. Gently toss to mix, and then serve right away.
