The flavors and textures in this chicken, apple, and bacon salad are delightfully balanced. A balsamic vinaigrette combines with sweet apple slices, crisp bacon, tart blue cheese, and tender chicken to create an incredibly delicious salad.
Ingredients: 2 boneless, skinless chicken breasts. 4 slices of bacon. 2 cups mixed salad greens. 1 apple, thinly sliced. 1/4 cup red onion, thinly sliced. 1/4 cup crumbled blue cheese. 1/4 cup chopped pecans. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Add salt and pepper to the chicken breasts for seasoning. Cook the bacon in a big skillet over medium heat until it's crispy. Take out and let dry on paper towels. Small pieces of bacon should be crumbled. Cook the chicken breasts for about 6 to 8 minutes on each side, or until done, in the same skillet with the bacon drippings. After taking them off the heat, give them a few minutes to rest before slicing into thin strips. Mix the mixed greens, sliced apple, red onion, crumbled bacon, sliced chicken, blue cheese, and chopped pecans in a large salad bowl. To make the dressing, combine the olive oil and balsamic vinegar in a small bowl. To taste, add salt and pepper for seasoning.
