Ingredients: 2 large aubergines, sliced. 2 tablespoons olive oil. 1 cup pomegranate arils. 1/2 cup sun-dried tomatoes, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup fresh parsley leaves, chopped. Salt and pepper to taste. For the dressing:. 3 tablespoons extra-virgin olive oil. 2 tablespoons harissa paste. 2 tablespoons lemon juice. 1 tablespoon honey. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: Preheat your grill or grill pan to medium-high heat. Brush the sliced aubergines with olive oil, then season with salt and pepper. Grill the aubergine slices for about 3-4 minutes on each side or until they have grill marks and are tender. In a large bowl, combine the grilled aubergine slices, pomegranate arils, chopped sun-dried tomatoes, mint, and parsley.
