Fattoush, a mediterranean salad. Basically a bread salad, made by farmers, they would fry leftover pita scraps in some olive oil, add to their seasonal vegetables and herbs. For this reason the ingredients in a fattoush recipe would vary from chef to chef. Here's my take on this quick and easy chopped up salad that you can make at-home. You can follow this FATTOUSH recipe below: For 2 people: Ingredients: 1. Green Cucumber - 1 no 2. Tomato - 2 nos(deseeded) 3. Onions - 1 no 4. Bell peppers (any available colour) - 1 no 5. Any lettuce - 6 to 7 big leaves(more if you like the crunch) - Cut into big pcs, with hand. 6. Olives》Green or Black or Kalamata (whole, pitted) - 8 nos 7. Pita bread/any bread - toast, make it crisp - 3 loaves For dressing> 1. Mint leaves(chopped) - 1 tbsp 2. Parsley leaves(chopped) - 1 tbsp 3. Crushed garlic - 3 cloves 4. Lime juice - 2nos 5. Extra Virgin olive oil - 2 tbsp 6. Salt - a pinch(taste n add) 7. Sumac(if available) - 1 tsp Method: •Chop all vegetables into 2cm dices ideally. •Mix all ingredients for the dressing in anther bowl. •Whisk well it to bring all together. •Add the dressing to the chopped vegetables, lettuce and mix well. •Garnish with pita bread and whole olives.
