Here's a simple easy recipe to incorporate this humble vegetable into your meals. 👩🍳Heat some oil(any), crackle some mustard seeds and curry leaves. Add some onions, garlic, sliced green chilli and fry them. Add the chopped ivy gourds, add some salt, turmeric and red chilli pwd. Add 1-2 tbsp water, cover with lid and cook in low fire. They were kind enough to share their food with me, so often even when I had opted for only accommodation without food and that was my first meeting with this exotic delicacy, Alu Vadi. These big heart-shaped, deep-veined leaves, with a soft velvety texture, are available throughout the year, but the best time to eat these leaves is now monsoon season. These leaves are used in cooking in almost all tropical and subtropical regions and you'll find traditional dishes that have become a part of their culture. Search the internet for Colocasia leaf recipes and you will be introduced recipes in all colours, with these leaves as the star ingredient or assigned a supporting actor role. In the Philippines, they cook these leaves with coconut milk and spices to create a dish called Laing. In Hawaii, the leaves are called luau and they make various dishes by stuffing and steaming them. No different in India, each state has a star recipe which they righteously swear by from recipes handed down by a generation of moms. The Parsis have a dish names Patrel, the very same dish when you get to Konkani-Maharastra goes by Alu wadi. In Kerala, we make these lovely stews, curries, with these leaves cooked in coconut gravy. This leaf is so adaptable, so versatile, you can add it to your curries with meat or other veggies in it, you can just sautee them with coconut and turmeric, batter fry it, the possibilities are endless and up to your creativity. Although AVOID consuming this leaf RAW. The leaf takes a large circular shape, because of the shape and size of this leaf, it has been used for many purposes, since ages, before polythene bags ever came into existence, this was used widely as a plate for serving meals and for packaging any food items like meat/fish from the market. In Kerala, this leaf is also used to prepare a delicacy called Illayappam, a healthy steamed sweet dish made from rice flour stuffed with jackfruit/bananas/green gram with coconut, jaggery and spices. Kasargod region of Kerala this leave is known as Appachembintela, meaning leaf used to line a cake vessel. Sri Lankans also use this leaf widely. In India, it used for a lot of religious rituals and very symbolic in our culture. Large, flexibe, waterproof also decorative, these leaves are so versatile and can be used in different preps. Banana leaf has the same use a parchment paper or aluminium foil, and it can easily replace these materials. It can be used for grilling, baking, steaming in purposes of cooking. It is used for serving the typical Kerala feast called Sadya, which dates back to 1000 of years. A lot of Asian foods, especially South Eastern cuisines use this as decorative, for plating food as well as for cooking, neamely dishes like lemper, nagasari, otak-otak. If you move towards Central America, they too use these leaves for cooking dishes like Vaho, Nacatamals. Even Mexican food uses Banana leaf in preps like tamales.
