This is a spicy and tangy take on the classic pulled chicken sandwich. It has soft shredded chicken tossed in buffalo sauce, blue cheese ranch dressing on top, and crunchy celery and red onions on top.
Ingredients: 2 lbs chicken breasts, boneless and skinless. 1 cup buffalo sauce. 1/2 cup ranch dressing. 1/2 cup blue cheese crumbles. 4 hamburger buns. 1/4 cup celery, finely chopped. 1/4 cup red onion, thinly sliced. Lettuce leaves optional. Tomato slices optional.
Instructions: Place chicken breasts in a slow cooker. Pour buffalo sauce over the chicken. Cover and cook on low for 4-6 hours, until chicken is tender and easily shredded with a fork. Remove chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix it with the buffalo sauce. In a small bowl, combine ranch dressing and blue cheese crumbles. To assemble the sandwiches, spread the blue cheese ranch mixture on the bottom half of each hamburger bun. Top with a generous portion of buffalo pulled chicken. Add chopped celery and red onion on top of the chicken. If desired, add lettuce leaves and tomato slices for extra freshness.
