The fennel, coriander and rosemary carry the flavor of this dish. #fennelpork #corianderpork #rosemarypork #sauteedpork #porkwithkale #lowcarb #ketofood #paleofood Ingredients: 2 lbs. reduced fat ground pork 1 inch ginger, finely diced 3 garlic cloves, minced 1/4 medium onion, chopped 2 tsps. coarse sea salt (less if using regular salt 1/4 - 1/2 tsp. ground black pepper 1 tsp. fennel seeds 1 tsp. ground coriander 1 tsp. dried rosemary 1 bunch kale (washed thoroughly, sliced off the stems and chopped) 2 TBSPs. Light olive oil Heat a large skillet over medium heat. Add olive oil. Sauté ginger, garlic and onion. Add ground pork, breaking it up into small chunks. Add sea salt and ground black pepper. Cover skillet for 8 - 10 minutes, stirring in between. Add fennel seeds, ground coriander and rosemary. Stir to mix well. Cover the skillet again for 5 minutes. Stir the pork. Most liquid should have evaporated by now and the pork starts to sizzle. Add chopped kale. Stir and cover skillet again for another 5 minutes, stirring in between. Serve alone or with a side dish.
