The crunchy coconut coating and soft salmon in these Coconut Crusted Salmon Bites are a great combination. They are served with a tangy sweet chili sauce. It's great as a starter or a main dish.
Ingredients: 1 lb salmon fillet, cut into bite-sized pieces. 1 cup shredded coconut. 1/2 cup breadcrumbs. 1/4 cup flour. 2 eggs, beaten. Salt and pepper to taste. Oil for frying. 1/2 cup sweet chili sauce. 2 tablespoons soy sauce. 1 tablespoon lime juice. 1 tablespoon honey. 1 teaspoon minced garlic. 1 teaspoon grated ginger.
Instructions: Warm up the oil in a pan over medium-low heat. Shred the coconut and mix it with the breadcrumbs in a shallow dish. Flour should be put in a second shallow dish. Add salt and pepper to the salmon pieces. First, coat each piece of salmon in flour. Then, dip it in beaten eggs. Finally, coat it evenly in the coconut breadcrumb mixture. Fry the salmon pieces in the hot oil for about three to four minutes on each side, or until they are golden brown and cooked all the way through. Sweet chili sauce, soy sauce, lime juice, honey, minced garlic, and grated ginger should all be mixed together in a small saucepan. Warm up over medium heat. Dip the coconut-crusted salmon bites in the sweet chili sauce that you've made.
