Savory bite-sized BBQ smoked sausages that are slow-cooked to perfection in a smoker and have a tasty marinade.
Ingredients: 1 lb smoked sausage, cut into bite-sized pieces. 1/2 cup barbecue sauce. 2 tablespoons olive oil. 1 tablespoon Worcestershire sauce. 1 teaspoon smoked paprika. 1/2 teaspoon garlic powder. Salt and pepper to taste. Wood chips for smoking.
Instructions: Preheat your smoker to 225F 107C. In a bowl, mix barbecue sauce, olive oil, Worcestershire sauce, smoked paprika, garlic powder, salt, and pepper. Add sausage bites to the sauce mixture, ensuring they are well-coated. Soak wood chips in water for 30 minutes, then add them to the smoker box. Place the sauced sausage bites on the smoker racks. Smoke for 1.5 to 2 hours or until the sausages are cooked through, with a nice smoky flavor. Baste with additional barbecue sauce during the last 30 minutes of smoking. Remove from the smoker and let them rest for a few minutes before serving.
