Ingredients: 1 8-pound bone-in pork butt, fat cap trimmed to 1/8 inch thick. 1/4 cup apple juice. 1/4 cup apple cider vinegar. 2 tablespoons vegetable oil. 2 tablespoons kosher salt. 1 tablespoon freshly ground black pepper. 1 tablespoon onion powder. 1 tablespoon garlic powder. 1 tablespoon paprika. 1 tablespoon brown sugar. 1 teaspoon cayenne pepper. Wood chunks or chips for smoking.
Instructions: Mix apple cider vinegar and apple juice and inject the pork butt. To make a rub, combine vegetable oil, brown sugar, cayenne pepper, paprika, onion powder, garlic powder, black pepper, and kosher salt in a bowl. Evenly coat the pork butt with the spice mixture by rubbing it in. Set the smoker's temperature to 225F 110C and add wood chips or chunks to begin smoking. After the seasoned pork butt is placed in the smoker, let it smoke for about 8 to 10 hours, or until the internal temperature reaches 195 degrees Fahrenheit 90 degrees Celsius. Before slicing the smoked pork with forks, let it settle for half an hour. Present and savor the tasty smoked pork with apple injection!
