Ingredients: 8 slices of bacon. 2 large onions, thinly sliced. 1 tablespoon olive oil. Salt and pepper to taste. 1/4 cup barbecue sauce. 1/4 cup shredded cheddar cheese. 1/4 cup chopped fresh parsley.
Instructions: Preheat your grill to medium-high heat around 350-400F or 175-200C. In a large skillet, cook the bacon over medium heat until it becomes crispy. Remove it from the skillet and place it on paper towels to drain excess grease. Crumble the bacon into small pieces. In the same skillet, add the olive oil and sliced onions. Season with salt and pepper to taste. Cook the onions over medium heat, stirring occasionally, until they become caramelized and golden brown, which should take about 15-20 minutes. While the onions are cooking, prepare a sheet of aluminum foil large enough to hold the onions and bacon. Place the crumbled bacon on the foil and drizzle it with barbecue sauce. Toss to coat the bacon evenly in the sauce. Once the onions are caramelized, remove them from the skillet and place them on top of the sauced bacon on the aluminum foil. Sprinkle shredded cheddar cheese over the onions and bacon. Fold the aluminum foil into a packet, sealing it tightly to prevent any juices from escaping during grilling.
