Mama Jean's Potato Salad is a traditional Southern dish made with soft potatoes, hard-boiled eggs, and a dressing that is both creamy and sour. It's great for picnics, barbecues, and any other get-together with family and friends.

Ingredients: 5 large potatoes, peeled and diced. 4 large eggs, hard boiled and chopped. 1 cup mayonnaise. 1/4 cup yellow mustard. 1/4 cup sweet pickle relish. 1/4 cup finely chopped onion. 1/4 cup finely chopped celery. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon paprika, for garnish.

Instructions: Boil the potatoes in salted water until tender, about 10-15 minutes. Drain the potatoes and let them cool completely. In a large bowl, mix together the mayonnaise, mustard, pickle relish, onion, celery, salt, and black pepper. Add the cooled potatoes and chopped eggs to the bowl, gently toss to coat evenly. Cover and refrigerate for at least 1 hour before serving. Sprinkle with paprika before serving.
