Scrambled Tofu (Soft Vegan Scrambled Eggs Recipe)
I'm having a bad body day so called off work and gunna try not be guilty about it
The texture of the tofu feels differently than usual. Due to a shortage, this is a brand I've never used before. It's less firm, more rubbery, holds more water. Even though I pressed it for an hour.
I haven't made scrambled tofu for a while - a combination of the scarcity of its main ingredient and my lack of energy. Tonight's the night though. And as my teeth bite into a sandwich filled with this yellow goodness, I realise I've missed it.
Protein fills my stomach quickly and the texture is as it's supposed to be, despite the changed brand. I've used a bit too much cumin though. That's what you get when chaos rules in the kitchen and you're allergic to measurement. It's still good, though. It's always good.
