This gluten-free vegan sandwich bread is great for people who are sensitive to certain foods or have to follow certain diets. It's fluffy and soft, and you can use it for toast or sandwiches.
Ingredients: 1 cup brown rice flour. 1/2 cup potato starch. 1/2 cup tapioca starch. 1/4 cup ground flaxseed. 2 teaspoons instant yeast. 1 1/2 teaspoons xanthan gum. 1 teaspoon salt. 1 cup warm water about 110F. 2 tablespoons maple syrup. 2 tablespoons olive oil. 1 teaspoon apple cider vinegar.
Instructions: Preheat the oven to 375F and grease a 9x5-inch loaf pan. In a large bowl, whisk together the brown rice flour, potato starch, tapioca starch, ground flaxseed, yeast, xanthan gum, and salt. In a separate bowl, combine the warm water, maple syrup, olive oil, and apple cider vinegar. Add the wet ingredients to the dry ingredients and mix until well combined. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Cover the pan loosely with greased plastic wrap and let it rise in a warm place for about 30 minutes. Remove the plastic wrap and bake the bread for 45-50 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
