Squid, XO, Dashi; second course of the aud135 pp four courses Du Jour menu from Hentley Farm, Seppeltsfield, South Australia (visited Feb 2020). This was paired with Ginger Kombucha (not pictured). Super delicious squid noodles with house-made Chinese XO sauce, shiitake mushroom and kombu broth. HENTLEY FARM 🥔🌻// Amuse bouche: Zucchini, rye, potato; part of our aud135 pp Du Jour menu from Hentley Farm, Seppeltsfield, South Australia (visited Feb 2020). This rye tart looks so much like a sunflower. 🌻😍 Per Chef David’s explanation, the rye tart has a zucchini Rogan Josh mix. They sautéed the pan with a bit of lime, smoked soy and there’s pomme purée and cracked pepper on top to finish it off. HENTLEY FARM 🍳🌸🌿// Amuse bouche: Quail egg, quinoa, curry spice; part of our aud135 pp Du Jour menu from Hentley Farm, Seppeltsfield, South Australia. Such a pretty and delicate amuse bouche. 😍 Per Chef David’s explanation, the quinoa crackers had been dehydrated then deep-fried back into chips. Sitting on top of that is a quail egg that’s half and half boiled so the yolk is nice and creamy. Underneath that is a curried mayo and that’s why the garnish is a curry leaf.
