The Shadow baker's pocket muffins! (Pg 122)

I started out with this recipe because I had the ingredients on hand. It's the sweet version of this recipe. The streusel topping kinda made a crust on top because I left it out instead of putting it in the fridge while I made the batter.

Other than my silly mistakes, these turned out really tasty. Normally, I'm not a big fan of corn muffins. A little dry, but paired with the blackberry compound butter, they were quite good.

I give it a 9/10
