I sauté some cinnamon sticks , bay leaves, star anise , cloves till aromatic , opsss I forgotten to put Szechuan peppercorn , pour 3 cups of oil , simmer it with slow fire , once see little bubble off the fire and set it aside for 4 mins. Strained away the spices , pour the oil into the big bowl with chili powder , #chili flakes , salt & sesame . Let it rest aside and use spoon stir it few times. This time my dumplings 🥟 filling I used minced pork , chopped prawns , chopped chives, chopped spring onions, chopped carrot , chopped ginger , seasoning with chinese cooking wine #shaoxingwine , salt , pepper powder , added 1 egg and some corn flour , used chopstick stirred all ingredients, make sure mixed them well together. Wrapped the dumplings with #gyoza skin, cooked in boiled water. Served with the chili oil + black vinegar + light soy sauce + chopped spring onions ! Voila !
