God, I love sheet pans. Yes, they are simply large slabs of aluminum with a rim, but they’re also some of the most useful, least expensive pieces of cooking equipment I own. You can pile a bunch of tools and ingredients on one to bring them outside to the grill. You can serve things directly off them and claim that it is because your aesthetic is rustic, not because you couldn’t possibly be bothered to transfer food to another plate that you just have to wash later. And they’re also a way to make a largely hands-off, anything-goes kind of meal. You can throw a bunch of ingredients on a sheet pan, put it in the oven, and then watch an episode of television for thirty minutes, or deal with the teetering pile of laundry, or calm down a raucous toddler, or whatever else while it cooks—no hovering over the stove. It’s also usually easy to clean up after—typically I just need to wash a bowl, a knife, a cutting board, and the sheet pan itself.

this half butt is my reward for working my way through all of the food that was stored in the cupboard and freezer at the beginning of the year. All of the dried beans, the frozen jars of homemade stock, the wild rice that was had carried to me from minnesota, the perfectly lovable can of tomato paste that for some reason never got chosen last year, they are all cooked and eaten and gone.
i still have some spices left: dried chilis, berbere, some jamaican curry powder, a crock of coarse salt that will be around for years. that quart jar in the corner is the last of my dry rub that i made at the old family house, maybe half a cup left. it will be enough to cover a big batch of chicken thighs when the time comes. there will always be pieces of the old home around but there are fewer of them all the time.

Every kitchen needs good quality baking sheets. Every kitchen, no exception. Why? Think cookies, bars, roasted vegetables, roasting meats..well, you get the idea. You need a good set of baking sheets and you want sheets that will last.
There are a few materials that you will find used to make baking sheets. Aluminum and steel are the two most common and they usually do the best job. Some sheets have a non-stick coating while aluminum has a shiny finish that isn’t non-stick but does a great job.
It Pays To Have 2 Sets Of Sheets
I have a few sets of baking sheets, each for a specific purpose. I learned (the hard way) that you don’t want to use a baking sheet for cookies that has already been used to roast meat on. I got a pair of sheets by Nordic Ware as a gift a few years back and they are my go-to sheets for cookies, sheet cakes and bars.
Made of aluminum (in the U.S.A) the sheets are standard sized for what is called a half sheet (about 16 1/2″ X 11 3/8″ with a 1″ lip). I found that aluminum is great for even heat distribution, meaning no burned parts on some cookies and underdone sections on others. I actually have a second set of these that I use to roast vegetables and meats but I really like how they work with cookies and bars.
Clean up is usually quite easy, just some warm water and soap. These pans are not dishwasher friendly, you aren’t supposed to put any brushed aluminum in your dishwasher. I like to use parchment paper or a silicone mat with some cookie recipes, making clean up even easier.
Nordic Ware has been making baking equipment for over 70 years. Besides these great baking sheets they also are the people behind the bundt pan, another kitchen essential. Quality wise these pans are excellent.
