Ingredients: 4 boneless skinless chicken breasts. 1 lb broccoli florets. 3 tbsp olive oil. 3 cloves garlic, minced. 2 tsp lemon zest. 3 tbsp lemon juice. 1/4 cup grated Parmesan cheese. Salt and black pepper to taste. 1/4 tsp red pepper flakes optional.
Instructions: Preheat the oven to 400F 200C. In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, salt, and black pepper. Place chicken breasts on one side of a sheet pan and broccoli florets on the other side. Drizzle the lemon-garlic mixture over the chicken and broccoli, tossing the broccoli to coat evenly. Sprinkle grated Parmesan cheese over the broccoli. Season everything with additional salt, black pepper, and red pepper flakes if desired. Roast in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and the broccoli is tender and slightly crispy at the edges. Serve hot, garnished with extra Parmesan if desired.
