Every time i eat in sild.
Herring and butternut squash pie
Recipe for anyone interested:
2 tins of herring (If you can get them in tomato, they are great! If not, add 1/2 a can of chopped tomatoes to this list)
3-4 medium potatoes
1 butternut squash (Peeled and cubed)
1/2 tube of tomato puree
Garlic (If you can't get hold of any fresh garlic, then dried chopped garlic will work fine! - Measure this to taste.)
Onion (Again, if you can't get fresh onion, then onion powder will be fine. Use about 1 and 1/2 tablespoons. Otherwise 1 small white onion chopped will do fine.
2 teaspoons of Russian or wholegrain mustard (Not essential, it just adds a nice zing.)
1/2 tablespoon Cumin
1/2 tablespoon Paprika
1/2 tablespoon Basil
2 teaspoons of Coriander (Remove this if you don't like it.)
2-3 tablespoons Fish sauce (To taste)
Salt
Pepper
1 roll of puff pastry (Don't worry if you can't make it yourself, store bought is fine!)

Fry off the onion and garlic if you have them fresh, if not skip this step.
Start your potatoes off boiling in a pan once you've peeled them and season with salt mid-way through the cooking process.
In a bowl, add your herring, fish sauce, mustard, tomato puree, herbs and spices.
On a baking tray, roast off your squash until softened and ready to mash up with a fork. (Don't make the chunks too small, or they will shrivel!) Once they are done, mash well with a fork. Add this to your bowl and mix in well.
Once your potatoes are boiled, mash them with some butter and set aside to cool a little. (Do NOT blend them or add cream, it makes them gross and runny and it won't work in the pie!) After they have cooled somewhat, they will have stiffened a little.
In a baking dish, add your fish mix to the bottom. Chop up your dill pickles into small coin shaped slices and lay them in rows on top of your fish mixture. Then add your potato onto the top, spreading it evenly.
Prepare your pastry and add it to the top of the dish. Decorate it however you want and egg wash it, milk wash it, or just leave it as it is. That's up to you.
Bake in the oven at around 180 degrees(Fan)/200 degrees/Gas Mark 4 until the pastry is cooked through. Timing is different for every appliance, so just keep your eye on it. When it's risen and golden, it's done.
