Here’s a quick glance at the cookbooks that kept me company during the 15-hour flight home from #Dubai. I absolutely cannot wait to pair the spices I got at the #spicesouk in #Deira (#OldDubai) with these #Emirati and other #Gulfcuisine dishes. In my opinion, it’s a cuisine that is really under-represented in the world culinary stage yet a real testament not just to the beauty of slow cooking, but also to the importance of the use of local, very minimal ingredients that came from the sea, the desert and the oases of the area.
