Ingredients: 1 1/2 cups chocolate cookie crumbs. 1/3 cup melted butter. 1 1/2 cups semisweet chocolate chips. 1 cup heavy cream. 1/4 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Preheat oven to 350F 175C. In a bowl, mix chocolate cookie crumbs and melted butter until well combined. Press mixture into the bottom and up the sides of a 9-inch tart pan. Bake crust for 8-10 minutes, then set aside to cool. In a saucepan, heat heavy cream over medium heat until it just begins to simmer. Remove from heat and stir in chocolate chips until smooth and melted. In a separate bowl, whisk together sugar, eggs, vanilla extract, and salt. Slowly pour the chocolate mixture into the egg mixture, whisking constantly. Pour filling into the cooled tart crust. Bake for 20-25 minutes or until the edges are set but the center is slightly jiggly. Let the tart cool completely before serving. For best results, chill in the refrigerator for a few hours or overnight. Slice and serve with whipped cream or fresh berries if desired.
