Ube! Ube! Ube! It’s the one year anniversary celebrations at Silo Park for Aldrin & Laura’s Hapunan. So Uncle trundled down Westhaven to see one of his favourite foodtruck family. Aldrin wanted Uncle to try the Lumpia; it’s Filipino-style spring roll filled with Longganisa, the traditional Filipino pork sausage, served with atsara slaw and sweet chilli jam. The Lumpia is now one of Uncle’s favourites on Hapunan’s menu. But my most favourite is the Ube Pandesal. We all grew up with ice cream sandwiches but to have Ube (sweet purple yam) in both the bun and icecream, it’s next level. The Ube Pandesal is topped off with toasted coconut. Masarap! Hapunan is featured in Lonely Planet Food’s new book “Around The World in 80 Food Trucks”, with easy & tasty recipes from chefs on the road. Aldrin & Laura have shared their signature dish, the Filipino Adobe del Diablo.
