Make your own cheese quesadilla
Grab a tortilla from the bread station. Add slices of cheese from the deli area (and shredded cheese, if available). Fold in half and put in the panini press.
Variation:
If there are black beans, refried beans, or any sort of beans available, add that as well to make a black bean & cheese quesadilla.

Never again will I buy mayo....ever.
I've known for a while that you can sub mayo for greek yogurt (plain) but I hadn't tried it...until today.
I made tuna salad. 1 tuna packet, 2 spoons of greek yogurt, and one scoop of a thick artichoke relish/sauce I use for pizza. Mix mix mix and served on 2 pieces of toasted potato bread.
Dare I say, that was the best tuna salad I've made. The artichoke sauce was better than the usual relish and the yogurt gives a tangy bite without the heaviness of mayo. Yum!
I also poured a bowl of bean salad BUT I'm stuffed....I guess its back to the frig for the bowl...
Blueberry Gateau.
The perfect, light lunch: wild sockeye salmon baked/steamed in little foil pockets of love. Seasoned with lemon, rosemary, olive oil, and a bit of homemade garlic/thyme butter (I saved and froze up from last time). Took me 30 minutes total, and barely any cooking! Served with warm, crusty bread with butter.
Baked shrimp scampi. I have to admit, I love the butter-garlic topping more than the shrimp itself. Definitely a mixture of ingredients worth writing down: butter, garlic shallots, parsley, rosemary, crushed red pepper flakes, and lemon zest. Sooo flavorful!
