So, my lunch today was a Sindhi meal which is also my favourites called (in Sindhi) Daar(dal) Chokha(rice) Saja(whole vegetables). The dal is blended yellow moong dal (grain) which is put on top of the cooked rice. The Saja is vegetables with gravy/ chutney of tomato, besan powder, green chillies and corriander leaves. The veggies used in this are normally potatoes, okra (bhindi), brinjal, capsicum and bitter gourd (karela). The vegetables are first fried 3/4th. You make a chutney of the stuff I mentioned for the gravy in the mixer. Keep a non stick on low flame, add oil a little tadka of hing and turmeric powder and then add the chutney for it to cook a little. Add red chilli powder, corriander powder, and mango powder and salt to taste. The green colour of the gravy will start changing and the gravy will turn thicker. Add the fried vegetables to it and let it cook for 10 mins on lowest flame. While serving the daal is supposed to be put on top for the rice. The vegetables are supposed to be.mixed with the rice n daal when eating. The pomegranate that you see on the side is optional to put on top of the rice and daal. It's kind of a family tradition to add them on top which my Nani (grandma) taught me and since then I've been having it like that only. My meals are incomplete without a papad or a Khichiyu because Sindhi..😝. And obviously since it's the season of Mangoes I have to have them. Curd is a must for me at lunch. Hell I'd eat it at dinner too. To really enjoy this meal one should try eating it Indian style i.e. with the hands. Since here the rice is eaten with a vegetable gravy this food is generally preferred to be eaten with the hand, which again I learnt from my Nani.
