Começamos nossa degustação de “Cabernets do Novo Mundo” com este belo australiano trazido diretamente da fonte pela confrade @justino.eliene – o “Sirromet Winemaker’s Trial Cabernet Sauvignon 2003” . Um vinho vinho de 14 anos de idade, 100% Cabernet Sauvignon, proveniente de Queensland, no leste da Austrália. Elaborado pela @sirrometwines com poda de 50% do cordão das vinhas (com drástica diminuição dos rendimentos do vinhedo – daí o nome “Winemaker’s Trial”), o vinho é amadurecido em barricas de carvalho francês (80%) e americano, sem informação sobre quanto tempo... . É possível que, pela idade, o vinho já tenha passado seu pico e esteja em curva descendente... Mas suspeito que tenhamos cometido um grave erro de serviço ao decantá-lo por cerca de 1 hora... O vinho merecia decanter apenas para separar os sedimentos... . Na taça, exibia coloração rubi intensa com halo castanho. Os aromas mostravam notas de frutas vermelhas muito maduras, já um pouco ossadas, especiarias (pimenta negra), um leve balsâmico (esparadrapo), muita madeira, couro e tabaco. Na boca era seco, com aromas de chá preto e fumo, e boa persistência.
