This Easy Oriental Coleslaw with Crunchy Noodles is a delightful twist on traditional coleslaw. The combination of fresh vegetables, a savory-sweet dressing, and the added crunch of toasted sesame seeds, slivered almonds, and chow mein noodles makes it the perfect side dish for any occasion.
Ingredients: 4 cups shredded green cabbage. 2 cups shredded purple cabbage. 1 cup shredded carrots. 1/2 cup thinly sliced green onions. 1/2 cup toasted sesame seeds. 1/2 cup slivered almonds. 2 cups crunchy chow mein noodles. For the Dressing:. 1/4 cup soy sauce. 1/4 cup rice vinegar. 3 tablespoons honey. 2 tablespoons sesame oil. 1 tablespoon grated fresh ginger. 2 cloves garlic, minced. Salt and pepper to taste.
Instructions: In a large bowl, combine the shredded green cabbage, purple cabbage, shredded carrots, and sliced green onions. In a separate small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, grated fresh ginger, minced garlic, salt, and pepper to make the dressing. Pour the dressing over the cabbage mixture and toss to coat the vegetables evenly. Let the coleslaw sit in the refrigerator for at least 30 minutes to allow the flavors to meld together. Just before serving, sprinkle toasted sesame seeds, slivered almonds, and crunchy chow mein noodles over the top of the coleslaw.
