You only need one pot to make these simple vegan Mexican beans that taste great when they're smoked. It's great as a main dish or a side!
Ingredients: 2 cups dried black beans. 1 onion, diced. 4 cloves garlic, minced. 2 tomatoes, diced. 1 chipotle pepper in adobo sauce, minced. 1 tablespoon smoked paprika. 1 teaspoon ground cumin. 1 teaspoon chili powder. 4 cups vegetable broth. Salt and pepper to taste. Cilantro for garnish.
Instructions: Rinse the black beans and soak them in water overnight, or use the quick soak method by boiling them for 5 minutes then letting them sit for 1 hour. In a large pot, saut the diced onion and minced garlic until fragrant. Add diced tomatoes, chipotle pepper, smoked paprika, ground cumin, and chili powder. Cook for another 2-3 minutes. Drain the soaked black beans and add them to the pot. Pour in the vegetable broth, season with salt and pepper, and stir to combine. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until beans are tender. Once cooked, adjust seasoning if needed and serve hot, garnished with fresh cilantro. Enjoy your smoky and flavorful vegan Mexican beans!

The flavors of these smoked bourbon beans are the ideal fusion of savory, sweet, and smoky notes. Bourbon gives the dish a deep, rich flavor that makes it a great side for any BBQ or get-together.
Ingredients: 4 cups cooked navy beans. 1 cup diced bacon. 1 onion, finely chopped. 1/2 cup bourbon. 1/4 cup molasses. 1/4 cup brown sugar. 1/4 cup ketchup. 2 tablespoons Dijon mustard. 1 teaspoon smoked paprika. Salt and pepper to taste.
Instructions: Preheat your smoker to 225F 107C. In a large cast-iron skillet, cook bacon until crispy over medium heat on the stove. Add chopped onion to the skillet and saut until translucent. Stir in bourbon, molasses, brown sugar, ketchup, Dijon mustard, smoked paprika, salt, and pepper. Simmer for 5 minutes. In a large mixing bowl, combine cooked navy beans with the bacon and bourbon mixture. Transfer the mixture to a smoker-safe dish and place it in the preheated smoker. Smoke the beans for 2 hours, stirring occasionally to ensure even flavor distribution. Remove from the smoker and let it rest for 10 minutes before serving.

Savor the deep, smokey flavor of slow-cooked, rich cowboy beans in a Dutch oven. Ideal for any outdoor event or regular dinner.
Ingredients: 1 lb dried pinto beans, soaked overnight. 1 lb smoked sausage, sliced. 1 onion, finely chopped. 1 bell pepper, diced. 3 cloves garlic, minced. 1/2 cup barbecue sauce. 1/4 cup ketchup. 2 tablespoons brown sugar. 2 tablespoons mustard. 1 tablespoon Worcestershire sauce. 1 teaspoon chili powder. 1/2 teaspoon black pepper. 4 cups chicken broth. Salt to taste.
Instructions: Preheat the smoker to 250F 120C. In a Dutch oven, combine soaked beans, smoked sausage, onion, bell pepper, and garlic. In a separate bowl, mix barbecue sauce, ketchup, brown sugar, mustard, Worcestershire sauce, chili powder, and black pepper. Pour the sauce mixture over the beans and stir well. Add chicken broth to the Dutch oven and stir again. Place the Dutch oven in the smoker and smoke for 4-5 hours, or until beans are tender, stirring occasionally. Adjust salt to taste before serving.
