Ingredients: 1 pack smoked sausages. 1 cup all-purpose flour. 1 cup milk. 1/4 cup unsalted butter. 1 tsp salt. 1/2 tsp black pepper. 1/4 tsp cayenne pepper. 4 smoked biscuits pre-made or homemade.
Instructions: Preheat Traeger wood-fired grill to 225F. Place smoked sausages on the grill grates and smoke for 1 hour. While sausages are smoking, prepare the smoked biscuits according to the package or recipe instructions. In a skillet over medium heat, melt butter. Add flour and whisk constantly for 2-3 minutes to make a roux. Gradually add milk to the roux, whisking continuously to avoid lumps. Cook until the mixture thickens. Slice the smoked sausages and add them to the gravy. Season with salt, black pepper, and cayenne pepper. Simmer for an additional 5 minutes. Split the smoked biscuits and place them on serving plates. Pour the smoked sausage gravy over the biscuits and serve immediately.
