Ingredients: 2 cups snap peas, trimmed. 1 red bell pepper, thinly sliced. 1 carrot, julienned. 1/4 cup sliced almonds. 2 tablespoons sesame seeds. 2 tablespoons rice vinegar. 1 tablespoon soy sauce. 1 tablespoon maple syrup. 1 tablespoon sesame oil. 1 teaspoon grated ginger. 1 clove garlic, minced. Salt and pepper, to taste.
Instructions: In a large bowl, combine snap peas, red bell pepper, carrot, almonds, and sesame seeds. In a small bowl, whisk together rice vinegar, soy sauce, maple syrup, sesame oil, ginger, garlic, salt, and pepper. Pour the dressing over the salad ingredients and toss until well coated.
