Ingredients: 2 1/2 tablespoons unflavored gelatin. 1/2 cup cold water. 2 cups granulated sugar. 1/2 cup Milo chocolate malt powder. 1 cup light corn syrup. 1/4 teaspoon salt. 1/2 teaspoon vanilla extract. Powdered sugar, for dusting.
Instructions: In a mixing bowl, sprinkle the gelatin over the cold water and let it sit for about 10 minutes to soften. In a saucepan, combine granulated sugar, Milo chocolate malt powder, corn syrup, and salt. Cook over medium heat, stirring constantly until the mixture reaches 240F 115C on a candy thermometer. This usually takes about 7-8 minutes. Remove the sugar mixture from heat and carefully pour it over the softened gelatin. Stir until the gelatin is completely dissolved. Using an electric mixer, beat the mixture on high speed for about 10-12 minutes until it becomes thick, glossy, and almost tripled in volume. Add vanilla extract and mix for an additional minute. Grease a 9x13 inch 23x33 cm baking pan and dust it with powdered sugar to prevent sticking. Pour the marshmallow mixture into the prepared pan and smooth the top with a greased spatula. Let the marshmallows set at room temperature for at least 4 hours, or overnight, until they are firm and no longer sticky. Once set, use a sharp knife or cookie cutters to cut the marshmallows into desired shapes and sizes. Dust the cut marshmallows with more powdered sugar to prevent them from sticking together.
